
Littlepicasso's favourite cookies is mom's homemade cookies.
Here's the recipe (extracted from a recipe book with slight modifications):
Ingredients:
- 150g of unsalted butter
- 40g of soft brown sugar
- 80g of caster sugar
- 1 egg yolk
- 1 teaspoon of vanilla essence
- 180g of self-raising flour
- 1 tablespoon of plain flour
- 150g Choc dots
- 30g of finely chopped almond
Steps:
1) Preheat oven to moderate 180 degree celsius. Line biscuit tray with baking paper
2) Using electric beater, beat butter, sugars and yolk in mixing bowl until light and creamy. Add vanilla essence, beat until combined.
3) Transfer mixture to large mixing bowl; add flour and two-thirds of the dots. Using a metal spoon, stir until ingredients are just combined.
4) Using fingers, press mixture together to form a soft dough (if dough is sticky, add 1 or 2 more tablespoon of plain flour into the mixture). Roll one tablespoon of mixture at a time into a ball.
5) Press remaining chocolate dots firmly on top of balls. Arrange on prepared baking tray, allowing room for spreading during baking. Bake for 15 minutes or until crisp and lightly browned. Cool biscuits on trays.
Best eaten within 3 days.
